Esmero White

VINE
SOIL: transition from schist to granite
CLIMATE: cold winters, very hot and dry summer
GRAPE VARIETIES: blend with predominance of Viosinho and Gouveio

OENOLOGY
HARVESTING DATE: mid setember
VINIFICATION: manual harvesting in boxes of 20 kg, sorting in mat of choice; pressing and cold settling for 24 hours; fermentation in steel tanks at controlled temperature
MATURATION: steel tanks and barriques

ALCOHOL: 13% vol.  |  TOTAL ACIDITY: 6,2 gr/l  |  RESIDUAL SUGAR: 0,6 gr/l  |  PH: 3,35

TASTING NOTES
COLOUR: clear and citric
AROMA: complex, with intense fruits and white flowers aromas
TASTE: elegant taste with good balance of acidity and flavours of peach and melon
GASTRONOMY: fish, white meats or lightly garnished pastas

Mimo White

GRAPE VARIETIES: blend with predominance of Touriga Franca and Tinta Roriz, but also Trincadeira, Tinta Barroca, Touriga Nacional...
VINE AGE: very old (80 years)

OENOLOGY
HARVESTING DATE: mid setember
VINIFICATION: manual harvesting in boxes of 20 kg, sorting in mat of choice; crushing with foot trodden, maceration/fermentation in lagar for 7 days
MATURATION: 18 months in French oak barrels

TASTING NOTES
COLOUR: dense and ruby red

Mimo Red

GRAPE VARIETIES:  blend with predominance of Tinta Amarela, Touriga Franca, Tinta Barroca, Touriga Fêmea, Malvasia Preta...
VINE AGE: old (50 years)

OENOLOGY
HARVESTING DATE: mid octber
VINIFICATION: manual harvesting in boxes of 20 kg, sorting in mat of choice; crushing with foot trodden, maceration/fermentation in lagar for 9 days
MATURATION: 18 months in French oak barrels
